RED WINES

Yakima Valley Vineyard

Banere

Banere is Bordeaux red blended with predominantly a Cabernet Sauvignon backbone which also includes Merlot, Cab Franc, and Petit Verdot. This Bordeaux blend provides a complex and wonderful experience for your palette.

 
Lonesome Spring Ranch and Bouchey Vineyards

Cabernet Franc

This robust and high-quality grape is one of the last varietals to ripen, picked, and processed giving the longest hanging times on the vine for maximum ripening to be achieved. This varietal produces a complex red wine with hints of strawberry, raspberry, chiles, and bell peppers. This wine appeals to a diversity of tastes and palates. We think Cabernet Franc is becoming more of a presence as the growing seasons get longer and we see dryer temperatures in the Yakima Valley.

 Cabernet Sauvignon

This awesome Cabernet Sauvignon is Big, Bold, and rich in flavours with incredible depth, balance and a long finish. It has the dark fruit flavours of a Cab that has been allowed to hang on the vine until it has fully achieved total ripening that contributes to its rich profile. We have come to appreciate the wonderful quality of Boushey Vineyard’s Cabernet Sauvignon and hope you will too.

Capstone Red

Capstone Red is a Boudreaux blended Red wine is specially blended with Cabernet Sauvignon, Sangiovese, Merlot, and a small amount of Petit Verdot. This is a very smooth drinking red wine that is an excellent price for the quality of this aged red wine. A bold red wine that has hints of flavours of dark cherry and plum with a pleasant and balanced finish. Aged in Hungarian Oak the complexity to the varietals complements each other well to hit all three zones of the palate with an excellent finish and mouthfeel. This continues to be a tasting wine club and visitor favorite.

Educe

Educe is a deep rich fortified port like wine. It is enhanced with a neutral grape spirit. Educe pairs wonderfully with richly flavored cheeses (including blue cheese and washed-rind cheeses), chocolate and caramel desserts, salted and smoked nuts, and even sweet-smoky meats.

Malbec

Capstone Malbec has a bright magenta to dark purple coloring that has ripe flavor profiles of black cherry, plum and blackberry. It is a very fruit forward wine that has a jammy character. We feel that Washington Malbec is the wine that is an up-and-coming wine in popularity for the growers in this state. We get these grapes from Boushey vineyards which is renowned for quality sourcing of Cabernet, Sangiovese, Merlot, and Syrah grapes that produce award winning wines. Merlot

Capstone Merlot loves Washington state’s two extra hours of sunshine a day and its cooler nights. The state is making some of the best Merlots in the world, and this one is no exception. Dark ruby red in color with striking red plum and oak aromas. On the palate, hints of plum and licorice fill the mouth with a sweet finish.

Petite Verdot

Petit Verdot is a late ripening grape that tends to drive the acid levels a bit higher. However, in warmer growing seasons, this grape produces rich fruit flavors, lighter tannins while maintaining its complexity and structure. Capstone Petit Verdot is a bright, complexly structured, red wine that is used both in blending and during warmer years bottled as an individual wine.

Regalis

Capstone Regalis is a single vineyard Bourdeaux Blend from our partners at Lonesome Spring Ranch in the Yakima Valley. This Red blend is named after one of our Capstone Founders Roy Bays. The Cabernet Sauvignon portion of this blend is aged in French Oak barrels and Merlot, Cabernet Franc, Petit Verdot, and Malbec are aged in Hungarian Oak barrels. This creates a unique and complex profile that has notes of vanilla along with a softening of the tannins in this blended red wine. The complexity of this rich red wine is a great stand-alone wine or pairs well with meaty dishes.

 
Boushey Vineyard

Sangiovese

We are thrilled with the quality and savory flavours of our Sangiovese. This wine is well suited to match with a variety of foods without being overpowering. Aged in oak barrels giving it a nice balance of oak and Boushey Vineyard fruit! Tastes of tart cherry, plum, strawberry and more of an acetic flavor profile is one of the local tasting favorites. This wine is excellent paired with meats, pastas, and red sauce meals.

Syrah

Syrah is drinking beautifully, and the use of both American and Hungarian Oak barrels has aged this boldest of Capstone red wines. The aged wine in oak has developed aromas that complement Syrah’s unique flavor profile showcasing a fruit forward punch of flavours with an enjoyable finish of a hint of pepper. Molasses and walnut with touches of boysenberry are commonly used to describe this bold red wine and it does not disappoint. There’s a greeting of black fruit on the palate with notes of dark plum, black currant, and dried blueberry backed by more walnut and brown sugar. Its structure is intense but balanced.

 
Solstice Vineyard (Willard Farms)

Unicus

Unicus is a Bordeaux style blend with a Merlot backbone. Cabernet Sauvignon, Merlot, Cabernet Franc varietals round out the blend. Unicus is filled with complex dark fruit forward flavor that provides for an enjoyable mouthfeel noted to have a long, lingering finish. Flavours of black cherries, plum, and a hint of licorice gives this wine a bold “jammy” bouquet signaling a new depth and complexity of the wine with silky round tannins. It continues to be a crowd favorite and is drinking wonderfully!

 

Rosé

Bella Rose

Capstone Bella Rose Rose’ is a pleasant wine known for its blush color and fruity flavors. Capstone Rose’ has a refreshing taste profile when served chilled which compliments the warm summer months. Capstone Rose’ has a perfect blend of the crispness you get from white wine with the depth of flavor found in a Sangiovese red wine. Our Rose’ is started with a Sangiovese grape base that has a unique balance of sweet and dry making this wine a refreshing choice for summer events with family and friends.

 

WHITE WINES

Lonesome Spring Ranch Vineyard

Cache

Cache is Capstone’s signature white wine. This is a blend of two Rhone Valley varietals that marry well for a unique and special refreshing white wine. Our Cache blend is a marriage of Viognier and Roussanne old country varietals that complement each other to bring forward a tasting experience of peaches, apricots, pears, pepper, and spice, for an excellent and enlivened mouthfeel. The late ripening of Roussanne lends a rich, silky smooth taste texture to the wine. We think you will enjoy this specially blended white wine.

Riesling

Capstone Riesling is an acid balanced white wine that has an intense aroma that has a primary aroma of orchard fruits like apricot, honey-crisp apple and pears. The striking flavors have a balance between sweet and acetic that is refreshing and pairs well with spicy foods. This is also an excellent balanced wine that when served cold is refreshing and pleasing to the palate.

Viognier

Capstone Viognier is light gold in color wine that has peach and apricot flavors; buttery and honey-like on the palate. It is a clean and fruity choice for those who love a smooth, not too sweet but refreshing white wine. This is a nice white wine that has a fresh fruit note.

Sauvignon Blanc

Capstone Sauvignon Blanc is a dryer, white wine that has a higher acidity with vibrant flavors. Flavors noted are citrus, orchard fruit, and some have shared, a refreshing hint of grassy or herbal notes.
